Unfair profits

“Unfair profits”, Unconscionable profits” – We often hear about unfair or unconscionable profits.  What are they?  How do you define them?  Who gets to decide what is unfair or unconscionable?  If a person earns profits through voluntary transactions with other people who are not forced or coerced to do business with him and who believe themselves to be better off for engaging in the transaction (otherwise they wouldn’t do it), and if the market is open to competition, with no government coercion, how can the profits be considered unconscionable?
